How do you make mint potatoes?

Hi, my mum is just back from a cruise and she said my daddy couldn't get enough of the mint potatoes with his dinner





I searched google and found a few but dont know if they'll be nice so would like some tried and tested recipes

How do you make mint potatoes?
Buy some new potatoes wash them and boil them in water and a little salt and with a few sprigs of fresh mint leaves.

Reply:Yogurt Mint Potato Salad





4 large potatoes


1/2 cup celery


1/4 cup radishes


1 tablespoon chopped chives


Mint Yogurt Dressing:


1/4 cup plain yogurt


1/2 cup mayonnaise


2-3 tablespoons chopped fresh mint





In saucepan, cook potatoes in boiling salted water until tender, about 30 minutes;drain. While slightly warm, peel and cube. In large bowl, combine potatoes, celery, radishes, chives and 1/2 cup of dressing. Cover. Refrigerate to blend flavors. Gently mix before serving; add additional dressing if needed. Dressing: Combine all dressing ingredients. Mix well. Store in refrigerator.
Reply:I make these two different ways. Just add some dried mint along with butter to mashed potatoes. Or use new boiled potatoes, either whole or sliced, mix dried mint with a little melted butter and pour over, either way they are gorgeous!!!

Reply:Up in Newcastle ye add a packet of polo mints to 6 tatties and mash em up!!!
