We LOVE our Chocolate Mint! For tea you can just throw a few leaves in your steaping cup of regular tea. My kids love the leaves put in chocolate milk shakes, just toss a few in the blender with the rest of your ingredients. Makes a great garnish on any desert! My favorite is to float a sprig in a Chocolate Martini...heavenly!
Reply:Yes they have to be dry, then wrap them in something like cheese cloth and put them in water like normal tea.

Reply:You can make it yourself. Simply get some cocoa and put those chocolate mint candies in there. I forget what they are called but there are 3 layers (2 chocolates and mint in the middle) drop a few of those in your hot cocoa and you have mint hot chocolate. You can also use candy canes for xmas.
Reply:Good luck, I could not find a true milkshake, made with real ice cream and milk in NY. Go to the store, buy yourself a small bottle of mint extract. If it is a good store, it will have spearment, peppermint, and wintergreen. If you are lucky you may even find other mints. Candy cane, has a little of vanilla extract in it. Take it with you, get the hot chocolate and put the mint in it yourself. In this weather and season, who wants to look all over New York. One more idea. All you need to do is buy a candy cane, of the mint you want, and use it as a stirrer. It won't be as strong as the extract, but it will work. Happy Holidays and Season's Greetings.

One method of drying is to pick the leaves, lay them flat in a single layer on a screen, and keep them in a cool dry place until they're dry enough to crumble. Depending on the type of mint, this could take several days, or several weeks (it depends on the moisture and oil content of the leaves). Be sure they are completely dry, then store them in a glass jar.





I normally try to leave the leaves as whole as possible until I need to use them to keep the essential oils from escaping.





I've also had luck just cutting entire stems of herbs, tying them together at the base, and them hanging them upside down from the top shelf of the pantry. As long as there's good air circulation, they should dry fine.
Reply:Take a handful of fresh spearmint, crush and roll it in your palms so the flavor and smell is released


Put a small pot of cold water on high on the stovetop.


When water boils, turn it off and add the spearmint.


Let it steep about 7-10 minutes.


Strain and serve. Honey makes a good sweetner. you can also use the same technique for a refreshing herb bath or hair rinse.

Reply:The plastic bag/rolling pin thing works the best. Double bag it, then put a towel over that. Those things get sharp when you crush them, and tend to poke through a single bag.

Even if you ship express they'll dry out shipped bare. A small amount of soil, moistened and wrapped in a plastic will keep roots from drying but there is no inexpensive way to transport them. They will get mouldy in a dark box if it takes too long.

Reply:You need to check the laws of the state you are shipping to. Mint is considered invasive in many places. And quite a few states have laws on what plants can be planted there. Invasive plants can decimate an natural ecosystem. (Think kudzu). Nothing can be shipped into Hawai'i. If you look at nursery catalogs, every one of them has 'cannot ship to...' and the various states that the plant can't go.


If you are shipping a plant into an area where it is termed 'invasive' you could be severely fined for illegal shipment of plant material.

Strawberries. Any way you can think of. Strawberry daiquiries with mint are a great summer drink. Icecream/sorbet with strawberries and mint are refreshing, too. It's even good in salad with a citrus based vinaigrette.


Or just add some kick to a fruit salad.

160 g butter, softened


310 g sugar


1 1/2 teaspoons chopped fresh mint


6 eggs


230 g desiccated coconut


210 g self-raising flour


for the mint syrup


200 ml water


180 g sugar


1 1/2 cups coarsely chopped fresh mint


75 g butter


180 g honey


180 g sliced almonds








Preheat the oven to 150ºC. Beat the butter, sugar and mint until they begin to change colour. Add small quantities of the egg, coconut and flour, beating well between each addition to prevent the mixture from curdling. Repeat until you have used these ingredients up.


Line a lightly greased spring-release cake-tin with baking paper. Pour the batter inches Bake for 1-11/2 hours (you can make the mint syrup during this time). Check the cake is baked by inserting a skewer in the centre. If it comes out clean, the cake is ready. Remove from the oven and allow it to cool in the tin for 5-10 minutes.


For the mint syrup.


Place all ingredients in a saucepan and bring to the boil, stirring occasionally to ensure the sugar is dissolved. Remove from the heat and allow to cool for 30- 45 minutes. Strain through a sieve and discard the mint leaves. Use the syrup as directed.


To assemble.


Preheat the oven to 170ºC. With the cake still in the tin, prick 60-70 holes in the top. Pour the mint syrup evenly over the cake, allowing it to soak inches.


Place the butter, honey and almonds in a saucepan and melt them together, stirring until all are well combined. Do not allow to boil. Remove from the heat and immediately spread this topping on the cake.


Place the cake back in the oven and bake the topping to a light amber colour (about 15 minutes). Remove and allow to cool in the tin for 20-30 minutes. Take the cake out of the tin carefully and while it is still warm, gently remove the baking paper. Dust the cake with icing sugar before serving.
Reply:You can use it to make Moroccan Mint Tea... typically this is a very sweet tea - but since you can control the amount of sugar - make it as sweet as you'd like.





Prepare green tea... add mint and boil until fragrant. Add sugar (to desired sweetness) and stir well. Pour tea into cup through a sieve (to catch the tea leaves and mint)... enjoy!

Reply:Two ideas 1 put it in a plastic bag and freeze it when you need just a bit of the mint take it out and it is just like fresh mint. 2 add a bit of vinegar and make a sauce out of it and add a bit to your oil and vinegar dressing it is great

You can use any vinegar you have or want to use, it does not matter a jot. I've used white vinegar, malt vinegar and have even used the last dregs from a bottle of white wine, but i've never actually used wine vinegar. Never had one complaint - the only thing that can go wrong is in using too much or too little sugar but thats easily corrected with a dash more vinegar or sugar.

In large sized pottery pots. Make sure you place them by a window that gets lots of sun. And very important, use a premixed potting soil with the fertilizer already in it.
Reply:lots of sun and large pots with good drainage.the herbs you can put in smaller pots but i suggest you label them if you are not good with remembering which is which.(my hubby one day when i was sick made me basil tea instead of mint.but at least he tried)and of course try to go organic if possable.there are good organic potting soils that have organic plant food mixed in.keep tomatos and the plant away from pet as they can be toxic to them.

Reply:A beige, cream, or light blue could work. Actually what I would do is go out shopping. I see these colors all the times in like striped handbags that women carry or sometimes on men's striped shirts.





Go to the stores and find a handbag or shirt that basically has somewhat the same colors and see what they use as accenting colors. It's kind of a revert to a 60's-70's style. Use their color combos to get a good idea.

If you feel it will be too much of one or the other, you can tone down with crisp, white linen and curtains/cushions etc, and also use a big rug to cover up some of the carpet! Good luck!

INGREDIENTS:


2 cups water


2 cups white sugar


1/2 cup roughly chopped fresh mint leaves 32 fluid ounces Kentucky bourbon

1. Combine water, sugar and chopped mint leaves in a small saucepan. Bring to a boil over high heat until the sugar is completely dissolved. Allow syrup to cool, approximately 1 hour. Pour syrup through a strainer to remove mint leaves


2. Fill eight cups or frozen goblets with crushed ice and pour 4 ounces of bourbon and 1/4 cup mint syrup in each. (Proportions can be adjusted depending on each person's sweet tooth). Reply:Not too sure about what a mint water is, exactly, but my best guess is just that it's minty-flavored water, right? No other special ingredients? You could always buy some dried peppermint (or spearmint, whatever your taste) at a health food store or organic food store, boil some water, get a tea infuser, put a bit of the loose dried peppermint in the infuser and dunk it a few times in the boiling water. Let it cool, then...voila! Mint water. Like I said, I've never had mint water, but if it's just mint and water, this seems like a good way to go about it. =D Good luck!!!

Sorry to disappoint you but it is a magicians coin. They can be very convincing but you need to understand that there is no way this can happen at the mint.





If your coin has two separate dates further supports this. The mint destroys the old dies are destroyed and replaced with the ones for the new year.





Sorry again, there really are some convincing novelty items out there. If you don't believe me. Take your coin to a dealer and let them tell you.

I moved into a house that has a garden out front. I don't know much about gardening, but would love to learn. This part of the house receives lots of sunlight. The garden is beginning to look overgrown and I need to tend to it, but I don't know how to prune or what to prune and what to do with the "harvested" herbs. Help!

the lavender I just let go and it gets NO water and it is thriving


The mint can also be cut fresh and put in some boiling water let sit for 10 min. after swishing it a few times, take out and sugar and you have the best tasting tea..even my 8 year old loves it..also got most our friends hooked onto it lol.


I also use the rosemay in bread that I make and I use it in a pasta salad that has all of the fresh herbs with some oil and a little salt and pepper all friends hooked on that also..grin

Reply:They say one can never get enough lavender. You can tie the flowers - on their long stems, with their leaves - in bunches and hang these upside down to dry. I hang my bunches up and down one long string which gets suspended at the side of a doorway - perfumes the house while they dry.





When dry, usually I leave mine for a few weeks, strip the flowers %26amp; leaves with your fingers. These can be used with tea, or for certain desserts, but the flavor is strong so a little goes a long way. The bulk of the dried flowers %26amp; leaves go into a sachet, a dainty little bag, fancy or plain, that you can sew easily. Or several sachets. These are for sweater or lingerie drawers or for linen closets. If you're really lucky and have a serious amount of flowers you can make a small lavender pillow. You wouldn't believe how fragrant these are. And they last for years.





There are different schools of thought about pruning lavender. Probably a good idea is to observe it for a year or two to get an idea of how it wants to be treated in your climate. Where I live, the lavender grows woody and shrubby, with new growth each spring emerging from the tips of long dead-looking woody growth if left unpruned. So I tend to prune part of each plant drastically in the fall, removing the oldest stalks right down to the crown, so as to encourage strong new growth from the crown of the plant the following spring.





Lavender is perhaps the most universal medicinal plant, good for whatever-ails-ya. It has antiseptic, antibiotic, even very mild anti-depressant properties. For a thousand years or more it has turned up everywhere, in waters, extracts, essential oils, perfumes, salves and creams.

Reply:Nice to get a garden with a house, huh? Anyhow, mint takes care of itself and is considered a weed by many because if it is in the ground it will take over and spread like wild fire. With the mint you will have to keep it in check by pulling often. You might look into interesting ways to use it. The Lavender is a little more fussy. The problem here is that you probably don't know if that lavender is used to being pruned, therefore, my suggestion is to not prune it or you might kill it. Water your lavender at the base once a week and it should continue nicely as it is. Rosemary is easy, however, if you have cold winters you will need to move it inside or replace it every year because one freeze will kill it. Water rosemary once a week as well. Hope this helps a little.


You can use fresh sprigs of mint in your tea or on top of desserts or you can dry it and use it as tea. Rosemary is good in meat dishes or stews and you can use it fresh or dried. Lavender is used for potpourri or mixed in soaps.

Are you sure it's an original? There are thousands of reproduction Nazi pieces out there. Check out ioffer.com to see what they've been going for. I wouldn't give more than $20 -$25 for it and then only if i could inspect it first for authenticity.

Hopefully they are inside right now, otherwise they won't be growing to well :-) J/K





Anyway.. basil will only grow new sprigs from seed so the more seeds you plant the more sprigs will grow. Now the mint should be spreading like crazy... i have 7 different kinds of mint and I always plant them in long box type planters because they grow along the surface. The more surface space they have the more they will grow... so maybe the surface space in your pot is to small? I also never plant mint in the ground because it will take over everything!

Reply:mint is like a monster, i cant imagine why its not spreading to overflow your pot. basil is a little more finicky--needs more heat and sunlight to do well. possibly the clay pots are the culprit. switch to plastic clay-colored pots. they retain moisture better. make sure theyre getting enough sunlight. in the winter this becomes more difficult unless you have a south window or a bay window or a skylight.
Reply:Plant's growth is dependant on the length of daylight they receive. Shorter days now prompts them to slow growth rate. Collect seeds for planting in the spring.

Ingredients





* 1-lb decent quality steak, sirloin or other


* 10 (or more) 'prik kee noo' (fresh hot Thai chili peppers), slice crosswise very thin (or substitute jalapenos or serrano chilies, minced)


* 2 large cloves garlic, sliced crosswise very thin


* 1 tbsp sugar


* 5 tbsp fish sauce (Golden Boy brand is recommended)


* 5 tbsp fresh squeezed lime juice (1 medium size lime)


* 1 head Bibb or Boston; or 1 heart of Romaine lettuce.


* 12 sprigs fresh mint (optional), remove the leaves and discard the stems


* 1/2 hot house cucumber or 1 small cucumber (seeds removed), peeled and sliced thin


* 2 to 3 shallots, sliced crosswise very thin or 1 small red onion, sliced very thin


* 3 or 4 sprigs cilantro, stems removed





Preparation





Grill or broil the steak until medium-rare. Trim off any fat. Cool and slice thin, into pieces approx. 2 inches across and 1/8 inch thick.





Mix garlic, chiles, fish sauce, lime juice, and sugar in a small bowl. Add the sliced meat and toss with the cucumbers and shallots. Taste and add more fish sauce if desired.





Make a bed of the lettuce on a serving plate. Place the beef on top. Garnish with cilantro. Serves 2 to 3 as an appetizer or as part of a meal.

If desired, chill beef, loosely wrapped, at least 2 hours and up to 1 day to facilitate thin slicing. Cut beef across the grain into very thin slices.





In a large bowl stir together lime juice, fish sauce, sugar, and chilies until combined well (sugar should be dissolved if using).





Add steak, shallots, scallions, coriander and mint and toss well. Score cucumber lengthwise with tines of a fork and cut crosswise into thin slices.

Here are the ingredients:





1 tablespoon mint-flavored simple syrup (recipe follows)


2 ounces Kentucky whiskey


Sprigs of mint





First prepare the mint flavored syrup, which should be made a day or 2 before your party.





Here's how to do that:





To make simple syrup: Bring 2 cups sugar and 2 cups water to a boil. Boil 5 minutes, without stirring. Cool to room temperature. Then fill a jar loosely with sprigs of fresh mint, crushed slightly, and cover with the cooled syrup.





Cover jar and refrigerate 12 to 24 hours. Discard mint. Refrigerate until ready to use. Makes 2 1/2 to 3 cups.





To make drink:





Fill chilled julep cup with finely crushed ice. Pour in the mint-flavored syrup and the whiskey. Frost cup, stick in a sprig of mint and serve at once

Mint is not picky. they'll spread quickly, so sunken containers can help if you don't want that. more important is light and water: plenty of light, plenty of moisture, though not waterlogged. mints are a great deer deterrent!!

It's recommended when planting mint that you place it in a sunken container so it can't spread like mad. Give up that nasty mint jelly and go with the real traditional mint sauce. Homemade mint sauce is quite simple to make with just a few ingredients. It is a must with roast lamb, but also goes well with other meats.


INGREDIENTS:





* 3 large handfuls of mint leaves, (stems previously removed)


* 3 teaspoons granulated sugar


* 4 Tablespoons wine vinegar





PREPARATION:


Wash and shake the mint leaves, sprinkle then with the sugar and chop them rather finely. Put in a bowl. Heat the vinegar and pour it over the mint.





Add more sugar if you think the sauce is too sharp. Serve hot or cold with roasted lamb or other meats.





Alternatives: Use lemon juice instead of vinegar and you can also add a little olive oil.





This is not traditional mint sauce, being much less violent in flavor, but it is exceptionally good.





Yield: 4 servings

Early spring is the best time. Make sure you know its not going to frost again. I like spearmint the best. Make sure if you grow both to keep them far apart, You dont want them mixing. Try growing Peppermint too.
Reply:Spring would be the ideal time but I have planted it in the summer too as long as you keep in watered until it starts putting on new growth. I have spearmint and "lemon". I love the lemon and I"ve wanted the chocolate but I haven't bought any yet.
Reply:You can grow mints anytime. They are perennials and will come back year after year. They are among the most prolific herbs ever; as a matter of fact, the problem most people have with growing mints is that they spread like crazy. That's why lots of people grow them in containers, so they don't take over the garden. Give them a moist and reasonably fertile soil, sun to partial sun, and you will have all the mint you can handle.


My personal preference would be for the chocolate mint. Spearmint is a little more coarse and less attractive to my eye, but that's my opinion.

Ingredients


1 1/4 cups graham cracker crumbs


1/3 cup butter or margarine, melted


2 (8-ounce) packages cream cheese, softened


1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)


3 eggs


1/4 cup lemon juice


1 1/2cup crushed mint oreo cookies





Directions


Preheat oven to 300ºF. Combine graham cracker crumbs, and butter; press firmly on bottom of 9-inch springform pan.


In large bowl, beat cream cheese until fluffy. Gradually beat in EAGLE BRAND® until smooth. Add eggs and lemon juice; mix well. add crushed mint oreo's and mix well.Pour into prepared pan.


Bake 50 to 55 minutes or until center is set. Remove from oven; top with sour cream. Bake 5 minutes longer. Cool 1 hour. Chill at least 4 hours. Garnish with pie filling (optional). Store leftovers covered in refrigerator

Blend all ingredients together and press into bottom of 10 Inch springform pan (and sides). Refrigerate about 30 Minutes.





OREO FILLING:


2 lb CREAM CHEESE, room temperature


1 1/2 c SUGAR


2 tb FLOUR


4 Extra large EGGS


2 lg EGG YOLKS


1/3 c WHIPPING CREAM


2 ts VANILLA


1 1/2 c OREO COOKIES, coarsely chopped


2 c SOUR CREAM





Preheat oven to 425-degrees. Beat cream cheese in large bowl until smooth. Beat in 1-1/4 Cups sugar and the flour until well blended. Beat in eggs And egg yolks until mixture is smooth. Stir in cream and 1 Tsp. vanilla. Pour half of batter into prepared crust. Sprinkle with Chopped Oreos. Pour remaining batter over, smoothing with Spatula. Bake 15 mins. Reduce temperature to 225-degrees, and bake 50 Minutes, covering top loosely with foil if browning too Quickly.





Increase oven temperature to 350-degrees.





Blend sour cream, remaining 1/4 cup sugar and remaining 1 Tsp. vanilla. Spread over cheesecake. Bake 7 minutes. Refrigerate immediately. Cover cake with Plastic wrap and chill overnight.





SWISS FUDGE GLAZE:


1 c WHIPPING CREAM


8 oz SEMI-SWEET CHOCOLATE, chopped


1 ts VANILLA





Mix everything %26amp; glaze the cheesecake with the mixture.

Your mint is going to keep spreading and will choke out most plants in its path-- best to move the eggplant right away.
Reply:Yes, it could be a very real problem. Mint is pratically a weed. It grows out of control and will take over everything. I've found it important to grow it in a seperate container so I'm not constantly battling it. If you want it in the ground, you can get a large container and bury it and plant the mint inside. Mint can choke out everything, the greedy thing. I would consider transplanting it or something if the eggplant and other veggies are important to you.





Transplanting or trying to get rid of mint can be difficult too as it will keep trying to crop up. So if you do try to move it, try to remove as many of the roots as possible from the ground and keep a close eye on the spot so you can keep pulling up the new shoots.
Reply:The mint family is a companion to the family that eggplant, tomatoes, and peppers are in, it's said to sweeten the fruit.





Mint is an aggressive plant and you will need to trim it back occationally to keep it from over shading or chokeing out your eggplant. (that's the olny inhibiting the mint might do)

Reply:I absolutely love fresh mint from the garden, but it must be contained in pots if you want to give other plants a good chance. So glad you asked now, while there's still a chance of saving your eggplant!

1 (5-pound) watermelon


1 Vidalia or other sweet onion


1/4 cup red wine vinegar


Salt and pepper


1/2 cup extra-virgin olive oil

4 ounces feta cheese, crumbled

Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and set aside. Peel and slice the onion into rings.


In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.

1 lb of Ground Beef


1/3 cup of finley chopped mint leaves


1 Hand Full of Rice (more like a fist full of rice)


1 Egg


Combine Beef, Mint Leaves, Rice and egg in a bowl and form into as many 1 inch meat balls as you can and set aside.


3 Roma Tomatoes cut into squares


2 Potatoes cut into bit size pieces


1 lg Carrot cut into round pieces


8 cups of chicken broth

In a large pot add the broth, tomatoes, potatoes and carrot and the other hand full of rice and bring to a boil. Once it starts to boil add the meat balls reduce heat and simmer for 30 minutes and add another 1/3 cup of mint leaves during the simmering process.





For a little heat add one Chipotle during simmering process or if you're a wimp add two teaspoons of the the Juice from the can of Chipotle peppers.





Try it. It is a very good soup, the mint leaves are what give this recipe its extraordinary flavor.

Add the mint leaves and sugar to the glass. Lightly bruise the leaves with a wooden spoon (don't break them up!). This is known as "muddling" and releases the yummy mint oils. Then add rum and lime juice. Stir to dissolve the sugar (this is critical to your success). Let the whole mixture rest for 2 minutes in the fridge. Then add a large handful of ice (enough to weigh down the mint leaves). Finally add the club soda. Stir again. Then garnish with lime quarters and mint leaves. Enjoy.

The Mockito: Don't drink? Just skip the rum for a great, alcohol-free summer treat.

two teaspoons of coffee grounds will not affect the mint plant very much at all....coffee grounds are a good amendment to soil as to cause it to have more air so that the roots can breath better....coffee grounds are also acidic....questions like is the mint plant in the ground or in a pot?...what is the soil acidity where the mint plant is at....mint is also invasive...so it is better to put in large pots so you have lots of fresh mint for teas and whatnot's...but if it is the lawn it will with time...take over
Reply:Mint like Neutral pH to slightly acidic. Used coffee grounds in moderation would be OK. Ah, the dreaded "Beware", for here they be monsters or some such, source I can't quote, sorry.





Mint is invasive, roots easily on the ground, just needs a little damp, prefers high organic material, and once established in the ground takes heavy equipment to remove all the roots. Hey, my shovel and I dug down 4', and out 6' and it came back.





Have lovely chocolate mint in 1 gallon containers (want some?) that overwintered in zone 8 totally neglected.

Lemon-Mint Couscous with Grilled Zucchini


This hearty salad can be served as a vegetarian main course or side dish:





INGREDIENTS


1 1/2 cups instant couscous


1/2 teaspoon salt


2 1/4 cups boiling water


2 medium-sized zucchini, quartered and sliced


1/3 cup extra virgin olive oil


3 tablespoons fresh lemon juice


Salt and freshly ground black pepper


3/4 cup crumbled feta cheese


1/2 cup black olives


1/4 cup chopped fresh mint





1. Lightly oil a vegetable grill rack. Prepare a medium-hot fire in the grill with the rack in place.





2. Combine the couscous, salt, and boiling water in a large mixing bowl. Cover and let stand until the couscous is tender and the water is absorbed, about 10 minutes. Fluff with a fork.





3. Meanwhile, in a medium-sized bowl, combine the zucchini, oil, and lemon juice. Season to taste with salt and pepper and toss to coat.





4. Lift the zucchini out of the marinade with a slotted spoon and grill until tender, turning occasionally, 8 to 10 minutes. 5. Add the grilled zucchini to the couscous, along with the feta cheese, olives, and mint. Add salt and pepper to taste. Toss to combine.

1 cup bulgur (cracked wheat)

2 large green onions, chopped


2 tablespoons chopped fresh mint preparation


Whisk oil, lemon juice, and garlic in small bowl to blend; set aside. Place bulgur in large bowl. Mix in 1 cup boiling water. Let stand until bulgur is tender and water is absorbed, about 15 minutes. Mix in tomatoes, parsley, green onions, and mint. Add oil mixture; toss to blend. Season with salt and pepper. Let stand at least 30 minutes to blend flavors. (Can be made 1 day ahead. Cover; chill.)

I'd imagine that mint is, to a small extent, an irritant to the mucosa in your mouth. As such, it makes your mouth hypersensitive to temperature changes (such as that which would occur when you drink water).

You can make it Provencal style.


just rub the roast with a mixture of chopped garlic, thyme and a little bit of rosemary and salt and pepper. Keep a little bit of the chopped garlic herbs and mix with breadcrumbs.


Cook roast in the oven to the internal temperature you like( I like mine medium rare).





Take it out of the oven, spread Dijon mustard on it then the breadcrumb mixture and put it back to a hot oven ( 400 degrees)for a couple of minutes till breadcrumb toast a little bit.


Let rest for at least 15 to 20 minutes.


It is usually done with rack of lamb but a leg will work too.


You do not need any other condiments with this.

2 tblsp oil

1/3 cup plain flour, extra


2 1/2 cups chicken stock


1 cup good quality red wine


1/4 cup tomato paste


Here's how


1. Toss lamb in seasoned flour, shake off excess. Preheat oven to 180C. Cut celery diagonally into 2 cm pieces. Peel and trim carrots. Heat oil in heavy-based pan, cook lamb on both sides over medium-high heat until well browned. Remove from heat; drain on paper towels.


2 Place meat in 12-cup capacity greased baking dish. Top with celery, carrots, potatoes, thyme and parsley.


3 Add onions and garlic to pan and cook, stirring, until onion is soft. Add extra flour, stir 1 minute or until onion is coated. Add the stock, wine and tomato paste, stir over medium heat until mixture boils and thickens.


4 Pour sauce over lamb and vegetables. Cover with foil or lid. Bake for 1 1/4 hours or until lamb is tender.





Storage time: This dish can be cooked one day ahead and reheated. Store, covered, in refrigerator.





Hints: Use four medium carrots, sliced, in place of baby carrots. A whole loin of lamb may be purchased and cut into noisettes. A boned leg of lamb, cut into 3 cm cubes, may be used as a substitute.

In a tall glass, add the mint and sugar. With the handle of a spoon, crush and mash the leaves to extract flavor. Fill the glass with crushed ice and pour in the bourbon. Using an iced tea spoon, stir together to mix and chill. Garnish with another fresh mint sprig and serve.

Ingredients:





* 4 fresh Mint sprigs


* 2 1/2 oz Bourbon


* 1 tsp Powdered sugar


* 2 tsp Water





Mixing instructions:





Muddle mint leaves, powdered sugar, and water in a collins glass. Fill glass with shaved or crushed ice and add bourbon. Top with more ice and garnish with a mint sprig. Serve with a straw.

Mint Julep #2


Ingredients:





* 6 fresh Mint sprigs


* 1 tsp superfine Sugar


* crushed Ice


* 3 oz Bourbon





Mixing instructions:





Lightly muddle 4 of the mint sprigs with the sugar and a few drops of water in the bottom of the glass. Almost fill the glass with crushed ice. Add the bourbon and some short straws. Garnish with the remaining 2 mint sprigs.

Mint Julep #3


Ingredients:





* 8 medium-size Mint leaves


* 1.5 tblsp Sugar syrup


* 1.5 oz Bourbon


* 1/4 tsp Angostura bitters





Mixing instructions:





In electric blender, blend on high for a few seconds, until leaves are reduced. Strain into silver tumbler packed with shaved ice, add more Bourbon to saturate the ice, garnish with a sprig of mint.
