What do I do with all my left over fresh cilantro, parsely and mint?

I don't have a dehydrator and I've already made tabouli.

What do I do with all my left over fresh cilantro, parsely and mint?
i'd make some salsa with the cilantro...make mojitos with the mint :) and use the parsley for a garnish
Reply:Just chop them and freeze them. They won't be as good as fresh when you go to use them, but they'll be better than bottled spices. If you really want to use them fresh, make up batches of salsa with the cilantro (freeze leftovers), make a big pot of pasta or soup with the parsley (freeze leftovers), and make some good greek dishes with the mint--so many to choose from. Maybe start with dolmas.

Or make pesto. It freezes nicely.


You can also make an herb syrup for drinks.

* 2 cups fresh basil leaves, packed


* some Parsley to your tasting


* 1/4 cup grated Parmesan cheese


* 1/2 cup Olive oil


* 3 tablespoons pine nuts or walnuts


* 3 garlic cloves, finely minced





With the cilantro, make a salsa. Just chop a tomato, onion, some jalapeno, put a little of clamato like 1/2 cup and chop the cilantro and mix. Its yuuummy.





Mint, make some soup (any kind) and put the mint in while its cooking. It gives it such a nice non minty taste.

Reply:with the cilantro and parsley just chop it up fine and add it to a great pot of vegetable soup or pea soup.


For the mint.. make Mojito's for the appetizer!
Reply:you can make a really nice mushroom and pasta dish with any selection of leftover herbs. Griddle or grill the mushrooms (big, flat ones are best - brush with oil first) then chop them into chunky bite size pieces. Mix with some olive oil, juice of a lemon, crushed garlic clove, your chopped herbs and some red wine vinegar. Season with salt and peper and give it a good stir to mix the flavours. Stir into cooked pasta (I prefer spaghetti).
Reply:You can stand them up in a glass of water and they will last for about another week... Gives you time to use them in other dishes.
